This family owned Grower champagne house was started in 1942 by Jules Lassalle in the village of Chigny-Les-Roses on the Montage de Reims. He became known as a master of his craft and he established a his style of elegant, tightly knit wines. After passing away in 1982, his wife, Olga, and daughter, Chantal Decelle-Lassalle, stepped in to take over the estate, whilst upholding Jules’s high standards and pushing the wines to the next level. Angeline, the granddaughter of Jules, joined the team in 2006.
Working with Chardonnay, Pinot Noir and Pinot Meunier over 16 hectares of Premier and Grand cru vineyards, all plots are pressed and vinified separately. The 45 parcels of vines are spread through the villages of Chigny Les Roses, Ludes, Montbre, Puisieulx, Rilly La Montage, Sermiers and Villlers Allerand. All the vineyards are owned by J. Lassalle, are on the same terrior and none of them are more than 10km from the winery. They still use the same wooden basket press the Jules installed in the winery over fifty years ago. All champagnes finish malolatic fermentation and are then extensively aged – a minimum of 5 years for all wines.
Preference – From approximately 60% Pinot Meunier, 20% Chardonnay and 20% Pinot Noir. A balanced and full bodied champagne embodying the spirit of the house. Bright pale yellow in colour with fresh minerality and ripe yellow fruits like peach and apricot. Underlined with hints of fennel and liquorice and a chalky, saline finish.
Blanc de Blancs – sourced from premier cru Chardonnay grown in the Montage de Reims. Yellow with some golden notes, the wine has a rich nose of white fruits like quince and pear and a hint of apple. Touches of orange peel round off the wine to a smooth, rich finish.
Cuvee Angeline – From 60% Pinot Noir and 40% Chardonnay, first created in 1973, the same year as the birth of Jules granddaughter Angeline. A real gastronomic wine it is pale golden yellow colour. Freshness and minerality are the first things you notice on the nose with hints of liquorice and fresh mint. The fragrance of yellow fruits such as apricot and quince and an almond pastry appear in a velvety sensation. On the palate there is a salinity freshness with a a round and full texture bringing body to the wine.
Rose – Réserve des Grandes Années – A mouthwatering Rose that has been produced with a tiny dose of red wine to help create a gorgeous pale salmon hue. On the palate you’ll find flavours of soft strawberry, elegant red cherry fruits followed by star anise and pickled ginger, with richer hints of toast and honey. This is an invigorating champagne with bright acidity and gentle minerality, meshing seamlessly.
