Alice grew up in the Jura and Oliver in Courgis, a small town southwest of Chablis. Both graduated from Dijon Enological school, where they met, and wanted to take a different approach to their vines and wines compared to what most other producers were doing in Chablis.
After working together in a large Chablis estate where Oliver was in charge of the vineyards, they started their estate in 1989 by planting 3 plots in Chablis. These are Bel Air, Clardy and Rosette. In 1994 they added some plots in Saint Bris of Aligote and Sauvignon Blanc. In 1996 they planted a plot in Chitry with Chardonnay and Aligote.
Usually, their wines are fermented and aged in old wood barrels. The exception here is with the Aligote which is from young vines and aged in cement and stainless steel and the Sauvignon Blanc which can sometimes take over a year to ferment is aged in stainless steel tanks. High acidity, length and purity are hallmarks of a DeMoor wine. Not a rule in the Chablis region, but all their grapes are hand picked, using smaller baskets to carry the fruit to avoid squashing them.
Their vines became organic over 15 years ago and only natural yeasts are used. Their wines don’t go through filtering or fining, except when the wines have a small amount of residual sugar. The winery is large and the ceilings are high, allowing all the cellar work to be done by gravity. Since 2008, they having been using a pneumatic press to treat the grapes as gently as possible
Mont de Milieu 1er Cru Chablis 2017 – A preimer cru on the eastern banks of the Serein river. A dry, southerly aspect and limestone rich soils give a terrior that is considered to be one of the best preimer crus producing wines that are floral, pretty and elegant. Less stony than other parts of the region, Mont de Millieu is low in fertility producing grapes that are highly concentrated. This mesoclimate is one of the warmest in Chablis, which makes Mont de Millieu one of the richest Chablis Premier Cru wines.
Coteau de Rosette, Village Chablis, 2017 – A touch reductive with light oak. Citrus notes of mandarin are followed by aromas of ripe melon, musk and wax. Mineral and sapid tones complete the bouquet. Slight creamy and round finish while still maintaining the lean and pure Chablis expression.
Chablis Le Vendangeur Masqué 2018 – A negociant wine produced with grapes from grape growers with similar schools of thought to the DeMoor’s. It is a taut, dry, mineral wine. Notes of pineapple and flint
